Kothu Parotta


Ingredients:

1 packet chilly paratha (frozen)
2 eggs
1 medium onion
1 tomato
3-4 green chillies
1 tsp chilly powder
A pinch of turmeric powder
1/2 tsp coriander powder
2 tbsp oil
salt as per taste
1/2 tsp mustard
1/2 tsp cumin seeds
1 cup coriander leaves
A few amount of spring onions

Method:
  • Take the frozen parathas (i bought chilly paratha ,its as per your wish),heat the skillet and make parathas and make it into small pieces (you can cut it in knife or with hands) and keep aside.
  • Now with the deep frying pan add 2tbsp oil when it heats add mustard,cumin seeds when it pops out add onions to it.
  • Onions should be in light golden colour now add green chillies and tomatoes to it (tomatoes should be finely chopped).
  • When it mashes down and oil gets up add chilly powder,turmeric powder and coriander powder.
  • Add eggs to it and beat it well now add salt as per taste,eggs should be well coated in onions and other masalas fry it for around 3-4 min.
  • Now add the parathas to it,just fry for 5 mins.
  • And garnish it with coriander leaves.

Thursday

Potato Soya Patties


Ingredients:

2 cup boiled potato
1 cup soya chunks
4 slices bread (white bread)
1 big onion
1tbsp chilly powder
salt as per taste
1 cup chopped coriander
oil for frying

Method:
  • With water boil soya chunks for 2 mins,drain the water and squeeze extra water in soya.
  • Dip the bread in water and squeeze the water,now make the bread into dough.
  • Add potato,bread,soya and chopped onion,salt,chilly powder,coriander mix all and make it like chapati dough.
  • With a skillet add a spoon of oil,make like cutlet shapes of the potato dough and shallow fry this till it turs golden colour.
  • Serve this with tomato ketchep.

Wednesday

Pav bhajji


Ingredients:

1/2 cup cauliflower florets
1/2 green peas
1 medium size carrot
2 medium potato
1 red capsicum
1 big onion
2 tomatoes
1 tsp finely chopped garlic
1 tbsp chilly powder
1 tsp coriander powder
1/2 tsp paprika
A pinch turmeric powder
1 tsp pavbhajji masala
salt as per taste
2 tbsp oil/butter

Method:
  • Pressure cook all vegetables and half of capsicum with sufficient water.then take the veggies coll it and with blender nicely mash and potatoes with masher.keep this aside
  • Heat a frying pan add oil,onions fry till it turns golden brown then add tomatoes and garlic.
  • Add little amount of water till the tomatoes get mashed.
  • Now add all veggies except potato add a cup of water and stir it.
  • Finely chop the half capsicum and fry it in oil till it gets crispy and add in the mixture.
  • Add chilly,coriander,turmeric powder,paprika and salt.add potato to it and pavbhajji masala.leave it for 5min till it comes to semi liquid.
  • Now turn off the heat add coriander leaves.
  • Serve with pav (i used hot dog buns).slice the buns into two halves and roast it with oil .



Capsicum chutney


Ingredients:

2 red bell peppers
1/2 cup roasted ground nuts
1 big onion
7-8 red chillies
2 tbsp oil
1/4 tsp tamarind paste
salt as per taste

Method:
  • In a pan with oil add red chili,onion fry till its turns light brown then add bell pepper fry this for about 10-12mins pepper turns it colour.
  • With blender or mixer add all ingredients as above and blend it with 1/2 cup water.chutney should be finely grounded.
  • If u like to tamper it u can add oil, mustard and some curry leaves.

Vegetable kurma


Ingredients:

5-6 florets cauliflower
1 carrot
1 medium potato
1 big onion
2 tomatoes
3 green chillies
1 tbsp chilly powder
1/4 tsp turmeric powder
1 cup coconut milk
1/4 tsp mustard seeds
1/4 tsp cumin seeds
salt as per taste
oil

Method:
  • Chop all veggies ,in a cooking pan add these veggies add salt,turmeric,chili powder and salt with 3cups of water (water should cover all the vegetables).
  • Chop onion,tomato and green chillies.with a frying pan add oil, mustard and cumin seeds let it pop out then add green chillies,onion and tomato fry for about 5-6min till the tomato gets mashed up.
  • Now add this to the vegetables which is getting boiled stir it till the veggies become tender.
  • At last add the coconut milk to the mixture let it boil for 5min then turn off the heat.
  • You can add extra masala too,i added aanachi poo for extra flavour.

Serve this hot kurma with rotis,chapatis.


Monday

Idli


Ingredients:

4 cups rice
1 cup urad Dal
5-6 fenugreek seeds
1 tbsp salt

Method:
  • Soak the rice overnight.
  • Grind first rice not to coarse point and keep that aside
  • Now add urad Dal this should be grounded finely.
  • Add salt to the batter and stir it and keep aside .
  • The batter should soak overnight till the batter comes out of the container.then take and stir nicely and it is now ready for idly and dosa.


Gram/chana dal sambar


Ingredients:

1 cup gram or channa dal
1 medium onion
2 tomato
3 green chillies
1tsp chilli powder
1/2 coriander powder
1/4 tsp turmeric powder
1/2 tsp tamarind paste
1/2 tsp mustard seeds
1/2 tsp cumin seeds
A pinch asoefotida
salt as per taste
1 tbsp oil

Method:
  • Pressure cook dal with turmeric powder,pinch of cumin seeds and asofoetida and sufficient water for about 10 mins.
  • And mash the dal with masher but it should not be mashed too finely because some of the dals should be visible.
  • Now with the frying pan add oil mustard seeds,cumin seeds and greenchillies fry this for a min.
  • Add onion (u can use small onions too) when it turns golden colour add tomatoes,chilli and coriander powder now add the dal and pour some water because it gets thicker .keep heat in medium
  • Add tamarind paste and salt as per taste and cook till the sambar gets nice aroma.
  • If u like coriander u can add that too.

Serve this hot with idli and dosa,but it goes nice with dosa.



Bisbellabath


This is one of the favorite receipe of us,this is very much famous in karnataka.it is not tht we follow the same way how they make this recipe,i do it with some different kind i do not use any vegetables to it.i prefer it to be too spicy,so here goes the receipe


Ingredients:

1 1/2 cup rice
1/2 cup toor dal
1/2tsp cumin seeds
1/2 tsp turmeric powder
A pinch of asafoetida
salt as per taste
5 cups water
(pressure cook this)

For masala to grind:

7-8 red chillies
2 tbsp toor dal
2 tbsp chana dal/gram dal
1 tsp fenugreek seeds
1 tsp dhaniya seeds
1 tsp cumin seeds
4-6 pepper
Little shredded coconut(optional)

For frying:

7-8 small onions
1 tomato
oil as required
1/2 tsp mustard seeds
1/2 tsp tamarind paste or as per taste
2 tbsp ghee

Method:
  • Roast the masalas without adding oil,fry this till colour changes and grind this masala to a fine powder again without adding water to it.
  • pressure cook the rice with all other ingredients to it for 10mins.
  • Turn off the heat and mash the rice with masher so it gets nicely mashed.
  • Take a frying pan add oil,mustard let it pop out then add small onions and tomato fry for 2min thn add a cup of water let it boil for some time till onion becomes tender.
  • Now add the masala to it and stir it continuosly and add tamarind fry for 5min till the raw smell goes off.
  • Add this masala in rice stir it side by side add little amount of ghee.
  • Serve this hot with pappad,appalam or raita.

Bread upma


This is one of the quick fix dinner and my favorite recipe as it takes less than 10 mins and can be prepared in a typical south Indian style. This would be one of nice alternative for the kids who does not like to have the bread as it is.

Ingredients:

Butter split top bread (as required)
1 medium onion
1 tomato
few curry leaves
1/2 tsp chilly powder
a pinch of turmeric powder
1/4 tsp mustard,cumin seeds, coriander powder
2 cups water
Salt as required
Oil

Method:

  • Cut bread into small pieces and keep aside.
  • Heat a frying pan and add oil, mustard, cumin seeds and curry leaves.
  • Add onions ( Chopped finely) and fry the onions till it turns in brown color
  • Now add chopped tomato's and fry for about 3-4 mins till it get mashed.Add chilly , coriander power and 2 cups of water.
  • When it comes to boil stage, add the bread pieces and stir it continuously ( becoz it tends stick to the pan). Fry for about 3-5 mins till bread mixes properly.
  • This can be taken without any side dish

Channa/Chole Masala


Ingredients:

1tin of chickpeas
1 red onion
2 tomatoes
2 green chillies
2 bay leaf
1 tbsp chilly powder
A pinch of turmeric powder
1 tsp paprika
1/4 tsp garam masala
1/2 tsp Channa masala powder
2 tbsp curd
1/4 tsp mustard & cumin seeds
salt as per taste
2 cups water

Method:

  • Firstly mash the Channa in blender or in mixie not to a fine coarse,keep that aside.
  • In a frying pan add oil,bay leaf ,green chili,mustard,cumin seeds let it pop out.
  • Add onion till it turns golden colour(should be finely chopped),now add tomato sprinkle water and fry for 2min till tomato gets mashed.
  • Add chilli powder,turmeric powder and water to it when it boils add grounded chick peas to it.
  • Now add garam masala,Channa masala powder and salt.
  • Add curd now,just fry about 2min,when it comes to thick consistency turn off the heat.
  • Garnish with Coriander leaves.

Eggplant Burji/Brinjal Masala




This is the recipe i found in Mallika Badrinath recipe book,i think this is different from all other eggplant recipes,but this not too spicy but it taste really good.

Ingredients:

2 big eggplant
1 red onion
1 tomato
1 tsp chilli powder
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp turmeric powder
4-5 curry leaves
1 tsp ginger garlic paste
2 green chillies
4 tbsp coconut milk
1 tbsp sour cream
little amount of mustard,cumin seeds
salt as per taste
1 1/2 cup of water
Oil

Method:
  • Finely chop brinjal add little amount of salt and tsp of ginger garlic paste n marignate for about 1/2 an hour,thn squeeze the water from brinjal and keep aside.
  • Take a pan add tbsp of oil(i used olive oil) and shallow fry the eggplant till it gets crispy,u have to fry this for abt 15min in medium heat and keep aside.
  • Add oil in frying pan when it is hot add mustard,cumin seeds,curry leaves,green chillies fry for a min,Add onion and fry it till it turns golden colour now add tomatoes (tomatoes have to be chopped finely)when it gets nicely mashed off add chilli ,cumin,coriander powder add water cover it off.
  • Now add the fried eggplant ,sour cream and coconut milk and little water,let it boil for 2min finally add salt to it.
  • when it comes to semi gravy turn of the heat.Serve it hot with chapati,roti.

Andhra Pesarat Dosa/Moong Dal Dosa




This is one of the favorite and most wanted recipe in andhra,i just tried couple of times it tastes too spicy and delicious,its my moms recipe.here goes the recipe.....

Ingredients:

2 Cups Moong Dal(should be in whole green colour)
1/4 Cup Rice
5-6 Green Chillies
Salt as per taste
1 Medium Onion

For Seasoning:

1/2 tspoon Mustard Seeds
1/2 tspoon Cumin seeds

Method:

  • Soak moong dal along with rice for about 6 to 7 hours.
  • Grind them along with greenchillies and salt as per taste,Do not grind this batter coarsely
  • Finely chop onion and add in the batter,do not fry it in oil.
  • Then with a pan add oil and mustard when it pops out add cuminseeds,pour it in the batter
  • Heat thava to medium heat and finally make thick circle and add oil .
Serve this hot with coconut chutney,peanut chuney.
Tips: You can add coriander leaves to the batter which gives nice aroma

Egg-Tomato Masala


Ingredients:

1Big Red Onion
2Tomato
2 Spoon Redchilli powder
1/2 spoon Turmeric Powder
Salt as required
1/2 spoon paprika(to get nice colour)
2 spoon oil
jeera seeds
mustard seeds
1cup of water
2eggs

Steps:

Take a frying pan add oil,mustard let it spultter then add jeera seeds finely chopped onion and tomato,now add onion then salt(usually i add salt with onion becoz onion gets cooked fast) then mash tomato with masher or with spoon,add now redchilli powder,turmeric powder and paprika fry this for a minute then pour some water,bring this to boil for 3 to 4 mins. Now break the eggs and add this in mixture ,then stir it continuously for about 6 to 7 mins.

After the mixture comes to semi solid turn the heat off and serve this with chapati/roti

Peanut Chutney




Ingredients:

1 cup roasted peanut
1 Medium onion
6-7 Red chillies
1 teaspoon Dhania
tamarind paste
Salt as required


For seasoning:

1 Spoon oil
1/2 Spoon Mustard Seeds
1/4 Spoon Jeera

Steps:
  • Heat a pan with one spoon of oil,add red chillies and dhania.fry this for a minute.
  • Keep that aside.Then add the oinon in the pan and fry it, until it turns golden brown.
  • Then turn off and keepaside and let it cool. With blender or mixie add all spices with tamarind paste and salt as you required and add the roasted peanut with some water and blend it to a paste.
Heat a teaspoon of oil tamper mustard and jeera seeds.
This goes well with Dosa,Idli and Upma

Rava Dosa



Dosa is one of the favorite dishes for south-indians. Usually people will get bored if they see same kind of Dosa everyday... Rava dosa is one of the varities in dosa which is more delicious to have during the evenings as dinner.


Ingredients:

1 Cup of rice flour
3/4 cup of rava
1/4 cup of Maida flour
salt as required

For seasoning :

2 green chilies
1 onion - chopped
few pepper
curry leaves
Oil and ghee as required ( More you add ghee its delicious!!!)

Steps:

  • Mix the rice , maida and rava flour together in a bowl to make it as batter. Add salt as required. Note that the batter should be more dilute than normal batter that we make for idly/dosa.
  • Take a pan and add a spoon of oil. After few seconds add mustard seeds, after few seconds add chopped onion, green chilies, pepper and curry leaves. Fry all these in the pan till onion becomes golden color. Add this to the dosa batter.
  • Take a tawa and heat it for few mins. Now pour the batter in the tawa from the edges to the center. spread ghee to the dosa. When it turns brown turn it.
Serve with coconut chutney.
